Why I love WALNUTS:
They're a good source of antioxidants which protect against cardiovascular disease, cancer, and neurodegenerative diseases (e.g. Alzheimer's Disease)
They're a plant source of healthy omega-3 fatty acids
They show benefits in reducing blood sugar in diabetes, and lowering blood pressure (a significant risk factor for heart disease & stroke)
Ingredients:
1 + 3/4 cup whole wheat flour
2 large ripe bananas (spotted brown) - mashed with fork
2 eggs
1/3 cup canola oil
1/2 cup date sugar
1/2 cup walnuts - chopped (can substitute with another nut)
1/4 cup milk of choice
1 tsp cinnamon
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
Directions:
1. Preheat oven to 325 F.
2. Mix all wet ingredients until well incorporated.
3. Mix in the cinnamon, baking soda, vanilla extract, and salt.
4. Mix in the chopped walnuts.
5. Add the flour and stir until combined.
6. Grease a 9x5 loaf pan or line with parchment paper. Pour batter into the pan and sprinkle some extra walnuts on top.
7. Bake in oven for 50 - 60 min. (depending on your oven) until toothpick inserted comes out clean.
8. Let it cool for a few minutes before removing from pan. Allow it to cool before slicing.
