These NO SUGAR, healthy, whole food Lemon Coconut Snack Bites are super easy to make and perfect for when the craving hits for a sweet snack. They're sweetened with stevia & monk fruit extract, which are natural sweeteners that are zero-calorie and don't raise blood sugar.
These snack bites contain nutrients such as Vitamin E (almonds & sunflower seeds), Vitamin C (lemon), and zinc (coconut)... all essential eye nutrients!
Ingredients
½ cup almond meal
½ cup shredded coconut
¼ cup pumpkin & sunflower seed mix (mine was salted)
1 heaped tbsp almond butter
Juice of ½ a lemon
5-8 drops of Now Foods Stevia & Monk Fruit extract (natural sweetener)
Directions
Blend in a food processor.
Add a little water if needed.
Roll into balls, and roll in coconut.
Place in fridge to firm up, and enjoy!
