Serves 2-4
Ingredients
2 medium zucchini (chopped) 1 onion (chopped) 1 red bell pepper (diced) One 15 oz can black beans (drained and rinsed) One 15 oz can diced tomatoes 1 tsp dried oregano 1 cup brown rice (cooked) 1/4 cup shredded cheddar cheese (I used Nabati Cheeze vegan cheddar)
1/4 cup shredded mozzarella cheese (I used Nabati Cheeze vegan mozzarella) - see promo code below!
1 tablespoon canola oil
Directions
Heat oil in large skillet over medium heat. Add onion, garlic, zucchini, and bell pepper. Stir occasionally and cook for about 5 minutes.
Add beans, undrained tomatoes, water and oregano. Increase heat and bring to a boil.
Add rice and mix well. Add salt and pepper to taste.
Sprinkle with cheese and cover with lid until cheese melts.
Remove from heat and enjoy!
