Healthy Black Bean, Rice Skillet (V, GF)

This vegan & gluten-free veggie skillet is full of eye-healthy ingredients and is easy to make for a quick & satisfying dinner!


Eye Health Nutrients:

Serves 2-4


Ingredients

2 medium zucchini (chopped) 1 onion (chopped) 1 red bell pepper (diced) One 15 oz can black beans (drained and rinsed) One 15 oz can diced tomatoes 1 tsp dried oregano 1 cup brown rice (cooked) 1/4 cup shredded cheddar cheese (I used Nabati Cheeze vegan cheddar)

1/4 cup shredded mozzarella cheese (I used Nabati Cheeze vegan mozzarella) - see promo code below!

1 tablespoon canola oil


Directions


  1. Heat oil in large skillet over medium heat. Add onion, garlic, zucchini, and bell pepper. Stir occasionally and cook for about 5 minutes.

  2. Add beans, undrained tomatoes, water and oregano. Increase heat and bring to a boil.

  3. Add rice and mix well. Add salt and pepper to taste.

  4. Sprinkle with cheese and cover with lid until cheese melts.

  5. Remove from heat and enjoy!
